If you would rather have your own trades strip it, that is fine too.
How do you arrive at the number you give us at the door?
It is built from measured square footage, the specific slab you chose, the number and type of cutouts, the edge detail, and whatever extras you asked for — waterfall sides, a full-height splash, removal of the old top. The consultant has all of that in front of him after the laser measure, so the figure is calculated in your kitchen rather than estimated from a phone description.
