Can you handle a working farm kitchen with long counter runs?

That is a good part of the work out here. Long runs mean planning where seams land — under a cooktop, at a corner, away from the sink — and matching the pattern across them so the joint reads as one surface. Wide islands, a second prep sink, a raised bar or a deep undermount for washing up after chores all get measured the same day. If the room takes more than one slab, you will know that at the visit.

What happens to the old countertops?

Removal is available and most people take it. The old tops come off on install morning, right before the new ones go down, so you are not left with an open kitchen overnight. Tell the consultant at the measure whether you want the tile backsplash taken back too, because that affects how the wall looks behind the new stone. If you would rather pull the old tops yourself, that is fine — just have it done before the crew arrives.

Does the water have to be shut off, on a well or the village system?

The sink and tap have to be disconnected before the old top comes off and reconnected once the new one is set, so water is off in that room for part of the day. Whether you are on a private well or the communal system serving part of Manilla, it is the same short interruption. Arrange your plumber for install day, or ask the consultant at the measure what the sink and tap you have chosen will need.

Is the number given at the kitchen table the number we pay?

That is the point of measuring on site. The figure is built from your actual dimensions and the specification you chose that evening — colour, thickness, edge, cutouts, seams, removal — rather than from an average kitchen.
